Matcha Mochi

This is a great treat to make every once in a while, and it's easier than you may think! All you need are a few ingredients, a microwave safe bowl, cling wrap (or a silicone cover for the bowl), and a microwave!

Instructions:

1. Whisk glutinous rice flour and matcha powder thoroughly in a microwave-safe bowl, removing all clumps from the matcha powder.

2. Stir in water, then sugar; mix until smooth.

3. Cover the bowl with plastic wrap (or silicone cover) and microwave for 3 minutes 30 seconds.

4. Remove rice flour mixture from the microwave. Stir and heat, covered, for another 15 to 30 seconds.

5. Let cool, and in the meantime, dust a work surface with cornstarch. Roll about 2 tablespoons of hot rice flour mixture into a ball. If you find that the mochi mixture is too sticky, even with the cornstarch, you can microwave it for another 30 seconds, covered.

6. Spinkle some extra cornstarch on top to prevent sticking, and you're done!
